Temperatures dipped down into the low 40s here, yesterday. I know....it’s probably colder where you are. But here in Vegas, that’s frigid enough to warrant flipping on the fireplace, breaking out the fleece and making a big pot of something comforting for dinner. In our house, that something was Beef Bourguignon….on the table in less than an hour thanks to my trusty Instant Pot (but can also be made in the slow cooker if you’re a little more prepared than I was. ) Serves 6 . . 1/4 cup flour 1/2 teaspoon each salt and pepper 2-1/2 pounds boneless chuck roast, cut into 1-1/2 inch cubes 2 thick strips applewood smoked bacon, chopped 2 tablespoons butter 3 cups red burgundy wine 1 cup beef stock 1 tablespoon minced garlic 6 medium carrots, peeled and cut into 1-inch sections 2 stalks celery, chopped 1 pound cremini mushrooms, stemmed and halved 6 large shallots, peeled and quartered 1 sprig thyme 1 sprig rosemary 1 teaspoon dried oregano 1/2 bunch fresh parsley, chopped 2 tablespoons tomato paste Optional: 2-3 tablespoons cornstarch Boiled egg noodles . . In a large zip-top bag, combine flour, salt and pepper. Add cubed beef and shake to coat. Press “Saute” function on your Instant Pot. Add bacon and cook, stirring frequently for 5 minutes, until just starting to crisp; remove bacon. Add butter and beef cubes, cooking and sitrring until beef is browned on all sides, 5-6 minutes more. Turn off and return bacon to the pot. Stir in wine and beef stock, stirring to scrap up any browned bits from the bottom. Add garlic, carrots, celery, mushrooms, shallots, thyme, rosemary, oregano, parsley and tomato paste. Lock the lid and turn the steam release handle to the sealed position. Cook on the Manual setting for 23 minutes. Carefully open the steam release handle to release the pressure. At this point, you can either serve the stew over noodles or you can thicken the sauce (I like a thicker sauce! ) Mix about 3 tbsp of the sauce with 2-3 tbsp cornstarch until smooth. Add back to the pot, stir, and simmer 5-10 minutes on the Sauté function until thickened. Serve hot (with warm bread for mopping up extra sauce. 😊 )
EASY TOFU KORMA⠀ ⠀ If you're like me and cannot resist a #currynight then this easy, super creamy korma is perfect for a delicious fakeaway option. ⠀ ⠀ Korma paste is really easy to make, and I used basic pantry ingredients in this recipe to keep it simple but without affecting the flavour. ⠀ ⠀ I also love using tofu in curries is it takes on the flavour of the curries beautifully and its packed with protein so it's ideal for a filling and healthy meal. ⠀ ⠀ Recipe (serves 2 )⠀ For the korma paste: ⠀ 1 tbsp cumin powder⠀ 1 tbsp dried coriander ⠀ 2 cloves garlic, peeled⠀ 5cm ginger, peeled⠀ 2 tbsp tomato puree⠀ 1 chilli, sliced ⠀ 60g cashew nuts⠀ 1 tbsp garam masala⠀ 1 tsp turmeric⠀ 1 tbsp water ⠀ ⠀ For the rest of the curry:⠀ 1 white onion, diced⠀ 280g @tofooco tofu blocked, diced⠀ 400ml coconut milk⠀ Pinch of sugar⠀ ⠀ In a blender, blend ingredients for korma paste until smooth. ⠀ Meanwhile, in a pan, fry tofu cubes until starting to crisp and turn golden. Remove from the pan and set aside. ⠀ Add onion to the pan and fry for a few minutes until softened. Add tofu back to the pan along with the korma paste and stir. Add coconut milk and bring to a simmer. ⠀ ⠀ Simmer for 10-15 minutes, until the sauce has thickened. Add sugar, then serve with basmati rice, and chopped cashews.

Recipe details👉 corn tortillas, rotisserie chicken (makes the meal even easier ), green chilis, corn, red enchilada sauce, taco seasoning, cheese of choice. Prepare your herbs ahead of time. 🌿 I always buy (or pick ) fresh herbs, chop them, and store them in glass containers in the freezer. Whenever I’m cooking it’s one less thing to chop! I just pull out my container, add seasoning, and pop it back in the freezer! What I usually have on hand - parsley, basil, green onions, thyme, rosemary, and cilantro! 2. Use an Instant Pot! 🍲 I love the instant pot because it takes less time to cook, and IP meals are usually fairly easy to prepare. If you need some recipe ideas, just search instant pot on my blog! (Link in bio. ) 3. Make one pot meals! Instead of pulling out a bunch of pots and pans, just pick one large sauté pan to cook your meal. Throw in a variety of vegetables, herbs, spices, and protein of choice! (I usually do ground beef or cubed chicken. ) This is also a great way to use your wilting produce. 4. Always always always cook EXTRA. 👩🏼🍳 When I make dinner, I cook a lot more than what we can eat that night. Leftovers usually last us about 2-3 days. If you’re already cooking, it makes sense to just make extra! (You’ll thank yourself later. ) 5. Use a mixture of fresh and frozen vegetables! 🍅🥦 I love using fresh, but frozen vegetables are great because they’re usually pre-chopped! (Which saves time! ) Typically I buy green beans, green peas, peppers, and cauliflower rice from the frozen section. Cauliflower rice is also my go-to for bulking up meals! You can pretty much add it to any soup or stir fry without altering the flavor. Home cooked meals do not have to be time consuming! 👏🏼 I have plenty of simple, healthy meals that take less than an hour to make on my blog! Chicken Shawarma Pittas with halloumi, salad, a Tzatziki style yoghurt dressing & some savoury chicken rice 🌮 super delicious & easy, fun dinner!! if you can’t get hold of all the spices that’s alright, you’ll be able to get most of them in any supermarket but for the ground coriander & ground cardamom they’ll either be in the foreign section of a bigger supermarket or in any little local Thai or Indian supermarket!! it would be great without them but if you can get hold of them it adds an extra level of flavour 😍 DEFOS use chicken thighs for this sorta recipe or any curry etc - they are a bit creepy looking 🤣 but take a higher heat & don’t go as dry as chicken breasts. 🌱vegetarian vegetable stew with beans and potatoes 🍅🥦🍠 - This homemade fail-proof fall recipe will be in my future cookbook!📚 I used onion and a fair amount of garlic in olive oil and added bell pepper, carrot, leek, tomato, broccoli, zuccini, white beans, chickpeas and a can of tomato pieces. I boiled a few white and sweet potatoes and added those also, together with a lot of spices and herbs. Simmer with the lid on until soft. When finished, garnish with a little bit of crushed feta cheese. It will give this dish so much extra! If you want to keep it vegan, leave it out or add a non-dairy alternative. Variations are endless. Look what you have left in the fridge and freezer and put it together. You could leave out the potato or add some lentils, depending on your health/food/fitness goals or special diet. This dish is truly for everyone! Last night we attempted the #FiveIngredientsChallenge and treated ourselves to a pork shoulder joint. We marinated it in smoked paprika and cider which was then slow cooked for four hours - the pork was literally falling apart 😍 Served with skinny fries and fresh corn, this was the perfect mid-week treat! Then for our #LeftoversChallenge we used the leftover pulled pork on ciabatta rolls with coleslaw, fresh lettuce and a splash of BBQ sauce - DELICIOUS!

Creamy gnocchi soup. It's a deliciously comforting soup that you will want to dip some fresh bread into and sop up all the wonderful flavors down to the last drop! ... ... Ingredients 1 carrot, shredded 1 stalk celery, diced 1 garlic clove, minced 1/2 onion, chopped 2 tbsp olive oil 1-quart broth 1/ tsp salt dash pepper dash thyme 16 oz. Gnocchi 2 cups half & half 1 cup spinach Saute vegetables in olive oil until softened. Add seasoning and cook a minute longer. Add broth. Bring to a boil. Add 16 oz. Gnocchi. Boil lightly for 4 minutes. Simmer for 10 minutes. Add half & half. Add Spinach.Simmer until warm and slightly reduced and thickened. ... ... This is an encore video from the spring. However, if you're looking for a Saturday suggestion, there's a Chicken Stroganoff recipe on my blog that's easy, delicious and tastes as good as the real McCoy, but also happens to be sans dairy or gluten 👌. My dad always served his stroganoff over a mountain of fried potatoes with lotsa gahhhhlic, which is the strongest low-key flex of all time. My Cheesy Mashed Potatoes have 3 kinds of cheese and are perfect for making during the holidays! 👉🏻 Bookmark this post to save it for later. 👉🏻 Tap @yellowblissroad to get the link to the printable recipe https://www.yellowblissroad.com/cheesy-mashed-potatoes/ CHEESY MASHED POTATOES Serves 8 INGREDIENTS • 4 pounds russet potatoes (about 8 medium ) • Salt • 1/2 cup butter melted (1 stick ) • 1/2 cup sour cream • 6 ounces cream cheese softened • 2 garlic cloves minced • 8 ounces white cheddar cheese grated, divided (about 2 ½ cups ) • 3 ounces Parmesan cheese grated or shredded (about ½ cup ) • Kosher salt • 1/4 teaspoon pepper • fresh minced parsley or chives for garnish INSTRUCTIONS 1. In a 5 quart pot, boil about 2 inches of water. Once boiling, add 1 tablespoon of salt. (Water should be enough to cover the potatoes, so add as much as you think you need - you can always scoop some out if it’s too much ) 2. Rinse, peel and dice potatoes into chunks. 3. Place potatoes into boiling water and cover (but keep the cover just slightly open to let steam escape ). Cook over medium-low heat for 20-25 minutes, or until potatoes are fork tender. They should almost fall apart when pierced with a fork. 4. Remove from heat and drain. 5. Place potatoes back into the pan and sprinkle with 1 teaspoon salt. Add softened butter and mash well. 6. In a large mixing bowl by hand or with a hand mixer, beat cream cheese, white cheddar cheese (reserve about ¾ of a cup for topping ), and Parmesan cheese together on low speed until smooth. Stir in sour cream, minced garlic, and black pepper. 7. Stir cheese mixture into mashed potatoes just until combined; don’t over mix or the potatoes will become gummy. Spread potatoes into a 2 or 3 quart greased casserole dish and top evenly with remaining white cheddar cheese. 8. Cover with nonstick foil and refrigerate for up to 24 hours. When ready to heat, bake at 350 degreed F, covered, for 20 minutes, then remove foil and bake an additional 20-25 minutes or until cheese is melted and potatoes are warmed through. *If baking immediately, while potatoes are still hot, reduce cooking time by 15 minutes and leave uncovered.
Crockpot Season, Best Season🔥 Chicken & Dumplings⬇️ 1lb Chicken Breast 2 Cans Cream of Chicken Soup 15oz Chicken Broth 1 Yellow Onion 1 C Carrots Pre-Made Biscuit Dough Seasoning: Salt, Pepper, Garlic, Thyme, Celery Salt and 1 Bay Leaf. Combine all ingredients (except the biscuits ) in a crockpot and stir. Cook on low for 6 hours. Remove the Chicken Breasts, shred with 2 forks and return to the pot. Cut the biscuit dough into desired dumpling sizes and add. Cook for 30-45 more minutes and enjoy!
~ LOADED BAKED POTATOES ~ These were quite possibly one of the nicest baked potato recipes I’ve ever made 🙊 Using the little bit of leftover chicken from last night’s dinner along with some veggies that needed using up, I turned out a magnificent meal enough for 4 people.. such a win! The best part is the sauce would be delicious stirred through pasta. It’s so versatile! Use any protein you have in the fridge and throw in your favourite veg, it will taste good whatever you add. Make it completely vegetarian by omitting the meat altogether - just add what suits your tastes and make it ASAP! Recipe is below and in my highlights. Enjoy 😘 🍃 Serves 4. You will need: 4 large baking potatoes Leftover protein of your choice, shredded (I used approx 200g of tandoori chicken ) 1 tbsp olive oil 1 onion, finely chopped 3 cloves garlic, minced 100g mushrooms, sliced 1 tbsp tomato purée Large handful sweetcorn 120g soft/cream cheese (low fat is fine ) Splash of milk 1 tbsp parsley, chopped 1 tbsp coriander, chopped 100g cheddar cheese, grated (optional ) 4 tsp butter for potatoes (optional ) 🍃 Spices: 1 tsp onion powder 1 tsp garlic powder 1/2 tsp dried oregano 1 tsp tandoori powder, heaped (you can sub with paprika ) 1/2 tsp black pepper Salt, to taste Chilli powder, to taste (optional ) 🍃 1. Pierce each potato lightly with a fork, wrap in tin foil, place on rack and bake at 200°C for 1 hour. For crispy skin, bake without foil and check after 45 mins. 2. Now fry onions in oil on medium heat till translucent. Add garlic and fry for 1 min. 3. Add spices and fry for 1 min before adding mushrooms. Stir well and add tomato purée. 4. Fry for 4-5 mins until mushrooms are almost cooked. Add a splash of water when needed to prevent sticking. 5. Add sweetcorn and stir well. Then add protein of your choice. 6. Stir in cream cheese till it melts. If the mixture is too thick, add a splash of milk to loosen. It should be a sauce consistency, thick enough to coat pasta but no more. 7. Remove from heat and add parsley and coriander. Stir and set aside. 8. When potatoes are cooked, remove foil, cut in half and add butter if using. Top with sauce, sprinkle over cheese and serve immediately.
